Tossed Rueben

4 oz. lean beef Pastrami - have the deli shred it so that it is falling apart.  You can use lean corned beef, but pastrami adds more flavor.

1/2 cups fat free Mozzarella or Swiss Cheese, shredded

1-1/2 cups sauerkraut, drained

1/3 cup home-made Thousand Island dressing (see recipe index).  *Take time to make this dressing, thousand island dressing from the store is loaded with carbohydrates!

Deli mustard to taste

1 1/2 Tbs. caraway seeds

 

Grill shredded meat and caraway seeds in a skillet sprayed with no-stick spray.   Mix in remaining ingredients, enjoy hot or cold!

 

Makes 1 BIG serving.
