Meatloaf Florentine

  2 1/2 lb.  ground beef, 90% lean, cooked and drained

3/4 cup turkey bacon -about 6 slices

3/4 cup low fat Parmesan cheese -shredded

 2 cups frozen spinach

1/4 cup egg substitute

1 tsp. Cajun seasoning

1 tsp. Italian seasoning

1 tsp minced garlic

3/4 cup water

2 1/2 cups stuffing, we use Uncle Bens brand

Salt and Pepper to taste.

  1 cup Red Marinara Sauce

1/2 cup low fat Parmesan cheese shredded

 

Mix all ingredients except sauce and extra parmesan cheese. Put mixture in a sprayed 9x13 casserole dish and spread evenly.  Top with marinara sauce and parmesan cheese. Bake in 350 degree pre-heated oven uncovered for 35-40 minutes or until cheese has started to melt.

 

Makes 9 servings.  Per Serving:

3 grams fat

30 grams protein

6 grams carbs

 

Can be frozen until ready to cook.
